Okay, okay, don’t be jealous… Promise?
If the apocalypse hits and grocery stores become a thing of the past, I’ve got a whole crop of wild corndogs growing right outside my back door!
I love a good corndog as much as the next country girl, and while these aren’t the deep-fried deliciousness we all know and love from the county fair, they are a surprisingly useful resource here on our quasi-homestead. These little beauties? Cattails aka wild corndogs.

Most folks recognize them, but not everyone knows just how many benefits they have. They’re basically nature’s Swiss Army knife. The young shoots? Edible. The roots? Also edible although I've heard they're slimy. The pollen? Super nutritious and can be ground into flour! Cattail pancakes anyone?
And the fluffy tops? Excellent for fire tinder, insulation, and even wound dressing in a pinch. If you find yourself stranded in the wild, a good patch of cattails might just save your bacon.
Learning about all the edible and medicinal wild plants around me has really opened my eyes to how abundant God’s provisions are—if we just know where to look. And for that, I’m so very thankful. I can’t wait to keep exploring and see what other hidden treasures are right in my own backyard.
What kinds of amazing natural resources do you have in your neighborhood?
